The salt comes from the salt-mines that exist at the Spanish border to Faro everywhere on the coast. The salt is usually still harvested by hand. Thanks to the clean water and the air in this region it can be taken directly from the salt basins and dried in the sun, without any further treatment. There are three qualities. The one with the highest quality are the salt crystals that form itself on the surface and are skimmed off with a rake. They come as the finest table salt on the market under the name "Flor de sal" or "Flor de Sel". The salt of the salt mountains, however, is removed at the end by machines and comes milled to the trade as "Sal do Mar".
